What to do with all those leftovers from Thanksgiving? Might as well start with breakfast! After sleeping off a full blown food coma from the day before, I figured it would be a good idea to shoot for something lighter for breakfast. That's when the thought of a smoked turkey hash came to me. Of course, it couldn't be a nice simple meat, potato, and onion hash, I wanted to really veggie it up. In fact, I thought about using a cabbage slaw mix but, thought it might be too bitter for the rest of my family so, I went with a broccoli slaw mix! And that's how I came up with the idea of...

Turkey in the Slaw Hash



Ingredients:

2 Cups Turkey (chopped)

2 Large Potatoes (diced)

1/2 Large yellow Onion (diced)

1 package of Broccoli Slaw Mix

1/4 cup Olive Oil or Grape Seed Oil

2 Tbs Turkey Gravy (Optional)

Eggs

Big Butz Chicken Dust or your rub/seasonings of choice

Big Butz Cranberry BBQ Sauce

 

Start with a pan on high heat with the oil in it and then the potoatoes go in. Followed by the turkey and onions then the slaw mix.

Then in went 2 Tbs of leftover Gravy and 1/4 cup of Chicken dust.

After the veggies had softened up, plate it up!

Throw an easy over egg on top.

Now to try it out, Mmmmm.... here's a bite for you!

The only thing it was missing was some Cranberry BBQ Sauce.

This was a nice light way to make use of those Thanksgiving leftovers. The great thing about it for me was it used leftover turkey and gravy but, it reminded me nothing of the coma inducing meal from the night before.
