 Who hasn't got home from work and only had 20-30 minutes to get dinner on the table before your family threatens you with death? Often at times like this, it feels like I'm shooting from the hip and hoping whatever I hit upon pleases everyone. This usually involves having a general idea of what I want to do mixed with grabbing whatever I can find on hand that I think is going to taste good. The other night was one of those nights and, I have to admit, what I made was such a crowd pleaser, I just had to share it with everyone. I call it...
Lazy Man's Pork Strogeanoff
Ingredients: (For 4-5 people) 1.5lb Cubed Pork (I used chunks from a Butt Roast for mine.) 1/2 Large yellow onion, diced 1 Red Bell Pepper, diced 1 tsp Garlic 1 Small Can of sliced Mushrooms 1-2 Tbs of your favorite Rub or Seasoning (I used a combination of Chicken Dust and Cow Pow.) 1/2 Can of Cream of Mushroom Soup (I used a low fat and sodium one but, I'm sure any will work.) 2 - 3 cups milk (I used skim) 1 Tbs of Grape Seed or Olive Oil 1 Bag or box of wide noodles (Most people use egg noodles, I used whole grain ones, same style.)
Start by getting a pot of water ready to cook the noodles in, then in another pan over medium low heat, add enough grapeseed or olive oil to not quite barely cover the bottom. Pork has a higher fat content in it and you don't need to overdo it on oil the meat will makes it's own. Add the pork to the pan and begin browning it. Once the meat has turned white, add your veggies and mushrooms. Cook over medium heat until the veggies start to soften then mix in the rub. After a few minutes, drop the heat down to low and add the soup and slowly stir in. Once the soup is mixed in, begin adding milk until you reach slightly above the desired thickness. The mixture will thicken as it cooks, you can always thin it out more as you go with more milk but, it won't thicken up anymore beyond a certain point. Continue to let the mixture cook over medium heat while you put the noodles into the boiling water to cook. During this time, the meat is absorbing the fats and liquids around it and becoming more tender. The longer it cooks, the more tender the meat will be. There may be some seasoning to taste but, once the noodles are cooked, you're ready to serve!
I served this up with some Italian Pole Beans and we had enough to feed our family of 4, including seconds by both of my girls and, I had enough for lunch at work the next day! (That is my favorite part, second and leftovers.) The next day at work, I tossed the leftover beans on top of the noodles and then topped it with the remaining stroganoff and a bit of hot pepper.
 I thought it was good the night before but, this combo was absolutely amazing! The flavor mixture was fantastic.
